My mom turned me on to this book…

The whole premise of the book is that today's wheat has been genetically engineered so much that it is now a SUPER carb unlike anything the human body has ever experienced before. Even a small serving of this “new” wheat triggered stunning surges in human blood sugar levels. The results were so dramatic, you actually get a SMALLER blood sugar shock from a candy bar than from a slice of today’s “healthy” whole wheat bread!! The glycemic index for a candy bar is 41, for one slice of bread is as high as 72- more than 1.4 times the index. No wonder people struggle to lose weight. Ughhh,…wowza!
Have you ever noticed the visceral fat around even average sized people’s belly? Why is it so hard to lose the fat around the belly? This book offers many interesting and NEW ideas in our “whole grains are sooo healthy” world.
Dr. William Davis has an extremely hard sell with his book's thesis that wheat - not just gluten - is bad for us. In fact, he says, as the single largest contributor to the obesity epidemic, it may be killing us. Regardless of whether you buy the argument, "Wheat Belly" is well worth reading, if only to examine Davis' provocative expose of "the harmful effects of what is actually a product of genetic tinkering and agribusiness being sold to the American public as 'wheat.'”
Anyway, Brent and I have always tried to stay away from things made with white flour and sugar, but I must say this was a shock. Back to the drawing board of our brain on eating healthy.
We decided to try to cut out wheat (which seems to be in EVERYTHING) and gluten.
Here are some of the food and recipes we have tried…
Wheat Free Pizza
1 head of cauliflower
3/4 cup olive oil
2 large eggs
3 cups shredded mozzarella cheese
1/4 cup grated Parmesan cheese
12 ounces of pizza sauce or 2 cans of tomato paste
Your choice in meat and vegetable toppings!
In large pot boil cauliflower until soft, about 20 minutes. Drain and then mash until the consistency of mashed potatoes with minimal chunks. Add 1/4 cup of the oil, the eggs and 1/4 cup of the mozzarella and mix well.
Preheat oven to 350 degrees. Lightly coat pizza pan with olive oil.
Pour the cauliflower mixture onto pizza pan and press the “dough” into a flat pizza like shape. Bake alone for 20 minutes.
Remove “crust” from oven and apply pizza sauce and the rest of the toppings you desire. Drizzle with a little olive oil and bake for an additional 10 to 15 minutes.
Banana-Blueberry Muffins (Brent’s favorite)
2 cups ground almonds
1/4 cup ground flaxseeds
Sweetener equivalent to 3/4 cup sucrose (I use stevia)
1 teaspoon baking powder
dash of fine sea salt
1 ripe banana
2 large eggs
1/2 cup coconut milk
1/4 cup walnut oil, coconut oil or extra-light olive oil
1 cup blueberries fresh or frozen.
Preheat the oven to 325F. Grease a 12-cup muffin tin with oil,
Combine the ground almonds, ground flaxseeds, sweetener, baking powder, and slat in a bowl and mix with a spoon.
In another bowl, mash the banana until smooth. Stir in the eggs, sour cream or coconut milk, and oil. Add the banana mixture to the almond meal mixture and mix thoroughly. Ford in the blueberries.
spoon the batte into the fuffin cups. Bake until a toothpick inserted in the center of a muffin comes out dry, about 45 minutes. Cool in the pan for 10 minutes, then turn out of the pan and transfer to a rack to cool completely.
Apple Walnut Bread
2 cups ground almonds
1 cup chopped walnuts
2 T ground flaxseeds
1 T ground cinnamon
2 tsp baking powder
1/2 tsp fine sea salt
2 large eggs
1 cup unsweetened applesauce
1/2 cup extra light olive oil, or melted coconut oil
1/4 cup coconut milk
Preheat oven to 325 degrees. Coat 9x5 loaf pan with oil.
Combine ground almonds, flaxseeds, cinnamon, baking powder and salt in a bowl and mix.
Combine the eggs, applesauce, oil and coconut milk. Pour into dry ingredients and stir. If too stiff, add some more coconut milk.
Bake until toothpick comes out dry, about 45 minutes. Cool in pan for 15 minutes.
Just thought I would share the newest thing in our house.
We have decided to eat as much raw food as possible and to stay away from all things processed. It is hard, I will not lie. But there are so many recipes that make you feel like you are eating your old “carby” favorites. :-)
